Ingredients
Egg8, hard boiled and peeled
Spinach2 bunches
Cooking oil (vegetable oil)2 tbsp
Cumin seeds½ tsp
Onion1 large, finely chopped
Ginger garlic paste1 tbsp
Green chilli2
Tomato2, chopped
Turmeric (ground turmeric)¼ tsp
Red chilli powder (indian red chili powder)1 tsp
Coriander powder (ground coriander)1½ tsp
Garam masala1 tsp
Kasuri methi (dried fenugreek leaves)2 tsp
Saltto taste
Water⅔ cup
Method
4 steps
1Blanch the spinach for 1 minute, cool in cold water and blend with the green chillies.
2Score the boiled eggs lightly, rub with a pinch of turmeric, chilli and salt and sear in a spoon of the oil until blistered. Set aside.
3In the rest of the oil, crackle cumin, fry the onion until golden, add ginger garlic paste, tomato and powdered spices and cook until the oil separates.
4Add the spinach puree and water, simmer for 3 minutes, then add the eggs, garam masala and crushed kasuri methi. Simmer 2 more minutes.
Serve it like this
Halve a few eggs to show the yolks, serve in a bowl with phulkas or jeera rice and a slice of onion.
