Pal payasam in the Kerala temple style.

Per serving, worked out from the ingredient table. Grandma's way is the starting point the other versions are compared with.

Ingredients

6 servings
Rice⅓ cup broken raw rice
Milk6 cups full cream
Water¾ cup
Sugar¾ cup
Ghee2 tsp
Cardamom¼ tsp

Method

4 steps
  1. 1Wash the rice and cook it in water and milk in a heavy pot on medium until it boils.
  2. 2Lower the heat and simmer, stirring every few minutes and scraping the sides, until the milk reduces by half.
  3. 3Add sugar and keep simmering and stirring until the payasam turns a soft pink.
  4. 4Stir in ghee and cardamom and take it off the heat. It thickens as it cools.
Serve it like this

Serve warm or cool in small bowls, never chilled hard.
