Classic unniyappam.

Ingredients

6 servings
Rice1 cup, soaked 3 hours
Banana2 small ripe bananas, palayamkodan
Jaggery¾ cup, melted and strained
Fresh grated coconut¼ cup, finely chopped bits
Gheefor the pan and to fry the coconut
Sesame seeds1 tsp
Cardamom½ tsp
Baking soda (bicarb soda, bicarbonate of soda)a pinch

Method

4 steps
  1. 1Grind soaked rice with the bananas and melted jaggery into a thick batter, a little coarse.
  2. 2Fry the coconut bits in a spoon of ghee until golden. Add with sesame, cardamom and soda to the batter. Rest 30 minutes.
  3. 3Heat the appe pan, put ghee in each cavity and fill three quarters with batter.
  4. 4Cook on medium low, turn with a skewer when the base browns and cook the other side.
Serve it like this

Drain on paper for a minute, pile onto a plate and serve hot with chutney on the side.
