Scotch bonnet chilli (habanero or scotch bonnet pepper, habanero chilli)3 green or yellow scotch bonnets
Onion2 large (1 blended, 1 sliced)
Red palm oil⅔ cup
Iru (fermented locust beans)2 tbsp iru (fermented locust beans)
Beef500 g, cubed and boiled
Goat tripe (boti)200 g shaki (tripe), boiled and cut
Egg6, hard boiled
Ground dried crayfish (ground dried shrimp)2 tbsp
Stock cube (bouillon cube)1 cube

- 1Blend the green peppers, scotch bonnets and one onion coarsely, then boil in a dry pot until most of the water evaporates.
- 2Heat the palm oil in a covered pot with the window open until it turns pale and clear, about 10 minutes. Cool for 5 minutes.
- 3Fry the sliced onion and iru in the oil, then add the pepper mash and fry, stirring, for 25 to 30 minutes.
- 4Add the boiled beef, tripe, crayfish and stock cube, then the eggs, and fry 10 minutes more. Season.
Serve it like thisSpoon over ofada or brown rice on a leaf lined plate with eggs and meat on top. Serve with fried plantain on the side.
