Classic oatmeal raisin cookies.

Ingredients

Butter½ cup, softened
Brown sugar½ cup packed
Sugar¼ cup
Egg1
Vanilla essence (vanilla flavouring, imitation vanilla extract)1 tsp
Maida (all-purpose flour, plain flour)¾ cup
Baking soda (bicarb soda, bicarbonate of soda)½ tsp
Cinnamon powder1 tsp
Salt¼ tsp
Rolled oats (porridge oats)1½ cups rolled
Raisins½ cup

Method

6 steps
  1. 1Soak the raisins in warm water for 10 minutes, then drain and pat dry.
  2. 2Cream the butter with both sugars until fluffy, then beat in the egg and vanilla.
  3. 3Mix in the maida, soda, cinnamon and salt, then the oats and raisins.
  4. 4Chill the dough 20 minutes. Heat the oven to 175 C.
  5. 5Scoop tablespoon balls onto a lined tray, 2 inches apart, and bake 11 to 13 minutes.
  6. 6Cool 5 minutes on the tray, then on a rack.
Serve it like this

Pile on a plate or pack in a tin with baking paper, served with a glass of cold milk or a cup of chai.
