Ingredients

4 servings
Prawns (shrimp)450 g, peeled
Buttermilk½ cup
Cornflour (cornstarch)⅔ cup
Cooking oil (vegetable oil)for frying (about 3 tbsp absorbed)
Mayonnaise¼ cup
Sweet chilli sauce3 tbsp
Red chilli sauce2 tsp sriracha
Lettuceshredded, to serve
Spring onion (green onion, scallion)2, sliced
Saltto taste

Method

  1. 1Whisk mayonnaise, sweet chilli and sriracha.
  2. 2Soak prawns in buttermilk with salt for 10 minutes.
  3. 3Lift out, toss in cornflour and shake off excess.
  4. 4Fry in hot oil in batches until crisp and pale gold.
  5. 5Toss hot prawns in the sauce and serve on lettuce with spring onion.
Serve it like this

Pile in a lettuce lined bowl, drizzle a little extra sauce and scatter spring onion. Serve immediately while crisp.
