Ingredients

4 servings
White maize meal (white cornmeal, maize meal)2½ cups white maize meal (mealie meal)
Waterfor nshima and greens
Spinach400 g pumpkin leaves or spinach, chopped
Peanuts¾ cup raw peanuts, finely ground
Tomato2, chopped
Onion1, chopped
Saltto taste

Method

4 steps
  1. 1Simmer the ground peanuts in a cup of water, stirring, until creamy.
  2. 2Add onion, tomato, greens and salt and simmer until tender.
  3. 3For nshima, whisk a third of the maize meal into cold water, bring to the boil and simmer 5 minutes.
  4. 4Add the rest of the meal a handful at a time, stirring hard with a wooden spoon, until thick and smooth. Cover and steam 5 minutes.
Serve it like this

Shape nshima into smooth oval patties with a wet spoon and serve with a bowl of ifisashi alongside. Eat with your right hand.
