Ingredients

8 servings
Glutinous rice flour (sweet rice flour)2½ cups
Brown sugar1 cup, or slab sugar
Water1 cup
Cooking oil (vegetable oil)1 tbsp
Datesa few red dates, to decorate
Sesame seeds1 tsp

Method

5 steps
  1. 1Dissolve the sugar in hot water and cool to warm.
  2. 2Stir the syrup into the flour with the oil to a smooth, thick batter. Strain.
  3. 3Pour into an oiled cake tin, decorate with dates and sesame and steam on medium for 90 minutes, topping up the water.
  4. 4Cool completely, overnight if you can.
  5. 5To serve, slice and pan fry in a little oil until crisp outside and gooey inside, or steam the slices until soft.
Serve it like this

Serve pan fried slices warm on a plate, crisp side up, with hot tea, or steamed slices for a softer bite.
