Maida (all-purpose flour, plain flour)4 cups, bread flour if you have it
Water1⅓ cups
Instant dry yeast1 tsp
Salt2 tsp
Sugar2 tsp
Olive oil1 tbsp for dough, 2 tsp for sauce
Tomato1 tin crushed tomatoes
Garlic2 cloves, grated
Dried oregano1 tsp
Mozzarellalow moisture, grated
Spicy salami (pepperoni)pepperoni, thinly sliced
Parmesangrated
Red chilli powder (indian red chili powder)chilli flakes, to serveMethod
- 1Mix flour, water, yeast, salt, sugar and oil into a smooth dough. Knead 8 minutes, then refrigerate overnight in an oiled tub.
- 2Divide in two, shape into balls and rest 2 hours at room temperature.
- 3Stir crushed tomatoes with garlic, oregano, oil and salt. Do not cook.
- 4Heat the oven as hot as it goes, with a stone or upturned tray, for 45 minutes. Stretch each ball to 30 cm.
- 5Top with a thin layer of sauce, mozzarella and pepperoni. Bake 8 to 10 minutes until blistered and the pepperoni curls into cups.
- 6Finish with parmesan and chilli flakes and cut into 8 big slices.
