Ingredients

Brown sugar1 cup, packed
Sugar¾ cup
Evaporated milk½ cup, or cream
Butter4 tbsp
Pecans2 cups, halves
Vanilla essence (vanilla flavouring, imitation vanilla extract)1 tsp
Salta pinch

Method

5 steps
  1. 1Toast the pecans in a dry pan until fragrant. Line a tray with baking paper.
  2. 2Combine sugars, milk, butter and salt in a heavy pan and stir over medium heat until dissolved, then boil without stirring.
  3. 3Cook to soft ball stage, 115°C, or until a drop in cold water forms a soft ball.
  4. 4Off the heat, add pecans and vanilla and beat with a wooden spoon for 2 to 3 minutes.
  5. 5Quickly drop spoonfuls onto the paper. Leave 30 minutes to set.
Serve it like this

Stack on a small plate or wrap individually in baking paper as gifts. Serve at room temperature with strong coffee.
