Ingredients

12 servings
Maida (all-purpose flour, plain flour)1⅔ cups
Butter100 g cold for pastry, 100 g soft for cream
Sugar2 tbsp for pastry, 3/4 cup for cream, 1 1/2 cups for icing
Egg yolk1 yolk
Waterfor pastry and icing
Milk2 tbsp
Vanilla essence (vanilla flavouring, imitation vanilla extract)½ tsp
Jam (jam or jelly)raspberry jam
Cocoa powder (unsweetened cocoa powder)1 tbsp

Method

5 steps
  1. 1Rub cold butter into flour and 2 tbsp sugar, add yolk and a little water to form a dough. Chill 30 minutes.
  2. 2Roll thin, cut rounds and press into 24 small tart tins. Prick and bake at 190°C for 10 to 12 minutes. Cool.
  3. 3Beat soft butter with 3/4 cup sugar, milk and vanilla until very light, like whipped cream.
  4. 4Put a little jam in each case, fill with mock cream and smooth level. Chill until firm.
  5. 5Make a thick white icing with sugar and water. Ice half of each tart white, then add cocoa to the rest and ice the other half.
Serve it like this

Arrange on a tiered stand or doily lined plate, two tone tops facing up. Serve chilled with tea.
