Ingredients

12 servings
Butter¾ cup plus 1 tbsp, divided
Sugar¼ cup plus 2 cups icing sugar
Cocoa powder (unsweetened cocoa powder)⅓ cup
Egg1
Digestive biscuits (graham crackers)200 g, crushed
Desiccated coconut (unsweetened shredded coconut)1 cup
Walnuts½ cup, chopped
Custard powder2 tbsp
Milk3 tbsp
Dark chocolate (bittersweet chocolate)120 g

Method

4 steps
  1. 1Melt 115 g butter, sugar and cocoa over low heat; whisk in egg and stir until thick. Mix in crumbs, coconut and walnuts. Press into a 20 cm tin and chill.
  2. 2Beat 60 g butter, custard powder, milk and icing sugar until fluffy. Spread over base. Chill 30 minutes.
  3. 3Melt chocolate with remaining butter; spread over. Chill until set.
  4. 4Cut with a hot knife into squares.
Serve it like this

Serve small squares chilled on a platter showing all three layers. Coffee or cold milk alongside.
