Ingredients

4 servings
Cooked rice3 cups day old jasmine rice
Thai red curry paste2 tbsp
Fresh grated coconut⅓ cup
Egg1
Rice flour3 tbsp
Cooking oil (vegetable oil)for frying (about 4 tbsp absorbed)
Cooked hamsom moo (fermented pork) or ham, sliced
Shallots4, sliced
Spring onion (green onion, scallion)sliced
Coriander leaves (cilantro)a handful
Mint leavesa handful
Peanuts⅓ cup, roasted
Dried red chillifried, crumbled
Lemon juicejuice of 2 limes
Fish sauce1½ tbsp
Sugar1 tsp
Lettuceto serve

Method

5 steps
  1. 1Mix rice with curry paste, coconut, egg and rice flour, then shape into balls.
  2. 2Fry or bake until deep golden and crisp.
  3. 3Cool slightly, then break into chunky clusters.
  4. 4Toss with pork, shallots, herbs, peanuts, chilli, lime juice, fish sauce and sugar.
  5. 5Serve with lettuce to wrap.
Serve it like this

Pile on a platter with lettuce leaves, extra herbs, lime wedges and fried chillies. Eat by wrapping in lettuce.
