Ingredients

Pork600 g smoked pork, cubed
Bamboo shoot1 cup fermented bamboo shoot
Dried red chilli1 raja mircha or 3 dried chillies
Green chilli3, slit
Ginger5 cm, crushed
Garlic8 cloves, crushed
Saltto taste
Water2 cups

Method

4 steps
  1. 1Wash the smoked pork and put it in a pot with water, ginger, garlic and salt. Cook covered until the pork is tender.
  2. 2Add the bamboo shoot and chillies. Cook uncovered until most of the water is gone.
  3. 3Crush a few pieces of chilli into the gravy for heat and cook 5 minutes more.
  4. 4Serve with rice and a side of boiled greens.
Serve it like this

Serve hot in a deep bowl with a swirl of ghee or a few coriander leaves on top, and rice or rotis on the side.
