Ingredients

Ghee½ cup, divided
Besan (chickpea flour, gram flour)⅔ cup
Brown sugar¾ cup, packed
Sugar2 tbsp
Egg2
Cardamom¼ tsp
Maida (all-purpose flour, plain flour)⅔ cup
Baking powder½ tsp
Salt¼ tsp
White chocolate80 g, chopped
Cashews⅓ cup, chopped

Method

6 steps
  1. 1Roast the besan in 30 g ghee on low heat for 7 minutes, stirring, until golden and nutty. Cool 10 minutes.
  2. 2Heat the oven to 175°C and line a 20 cm square tin. Whisk the remaining ghee, warm, with the brown sugar and sugar for 1 minute.
  3. 3Whisk in the eggs and cardamom until thick and shiny.
  4. 4Fold in the roasted besan, maida, baking powder and salt, then the white chocolate and cashews.
  5. 5Spread in the tin and bake in the oven at 175°C for 25 minutes.
  6. 6Cool in the tin 1 hour, then cut into 16 squares.
Serve it like this

Stack three squares in a criss cross tower on a small plate. Dust with cardamom sugar and top with a single toasted cashew.
