Ingredients

1 servings
Egg3
Button mushroom6 button mushrooms, sliced
Garlic1 clove, minced
Butter2½ tsp, divided
Flat leaf parsley1 tbsp, chopped
Gruyère cheese2 tbsp, grated
Salt2 pinches
Black peppera pinch

Method

5 steps
  1. 1Heat half the butter in the pan on high. Add the mushrooms in one layer and leave them alone.
  2. 2Add the garlic and a pinch of salt, toss for a minute, then tip the mushrooms into a bowl with the parsley.
  3. 3Beat the eggs with the remaining salt and the pepper.
  4. 4Wipe the pan, melt the rest of the butter on medium and pour in the eggs. Push the set edges inward and tilt.
  5. 5Spoon the mushrooms and gruyere over half, fold and slide onto a plate.
Serve it like this

Fold it so a few mushrooms spill out of the seam and finish with a pinch of parsley on top.
