Potato3 medium, waxy
Egg3, boiled
Tomato1 large, diced
Cooked ham4 slices, diced
Dill pickles (gherkins)6 to 8 cornichons, sliced
Mayonnaise⅓ cup
Prepared mustard1 tsp, Dijon
Flat leaf parsley1 tbsp, chopped
Salt½ tsp
Black peppera pinch

Method

4 steps
  1. 1Boil potatoes until just tender, peel and dice while warm.
  2. 2Mix mayonnaise with mustard, salt and pepper.
  3. 3Fold potatoes, chopped egg, tomato, ham and cornichons into the dressing. Chill.
  4. 4Finish with parsley before serving.
Serve it like this

Serve chilled in a glass bowl with parsley on top, beside cold meats or as part of a buffet.
