Classic motichoor ladoo.

Ingredients

12 servings
Besan (chickpea flour, gram flour)2½ cups, fine
Water300 ml for batter, 150 ml for syrup
Gheefor frying, about this much is absorbed
Sugar1½ cups
Saffrona big pinch
Cardamom½ tsp
Melon seeds (melon seeds, peeled)1½ tbsp
Pistachios1 tbsp, slivered

Method

5 steps
  1. 1Whisk besan and saffron with water into a smooth, flowing batter.
  2. 2Make a one string syrup with sugar, water and cardamom.
  3. 3Tap batter through a fine boondi ladle into medium hot ghee and fry 30 seconds, without browning.
  4. 4Drain into warm syrup, repeat, rest 20 minutes, then add melon seeds.
  5. 5Grease your hands and press into 20 ladoos.
Serve it like this
