Moong dal (split yellow mung beans)1 cup yellow moong dal, soaked 3 hours
Rava (semolina)3 tbsp
Curd (plain yogurt, natural yoghurt)¼ cup
Carrot1 small, finely grated
Sweet corn kernels (corn kernels)¼ cup kernels
Capsicum (green capsicum, green bell pepper)2 tbsp, finely chopped
Ginger1 tsp, grated
Cumin seeds½ tsp
Coriander leaves (cilantro)1 tbsp, chopped
Salt¾ tsp
Baking soda (bicarb soda, bicarbonate of soda)¼ tsp
Cooking oil (vegetable oil)4 tsp, for the panMethod
- 1Drain the soaked dal and grind with the ginger and very little water to a thick, slightly grainy batter.
- 2Stir in rava, curd, vegetables, cumin, coriander and salt. Rest 10 minutes.
- 3Just before cooking, mix in the baking soda.
- 4Heat the appe pan, add a few drops of oil to each cup, fill three quarters and cook covered on medium low for 4 minutes.
- 5Turn each appe with a skewer and cook 2 to 3 minutes more.
Serve it like thisPack six appe with a small pot of coconut chutney mellowed with curd. At home, serve hot with ketchup on the side.
