Ingredients

4 servings
Porkpork shoulder or collar, thin slices
Garlic6 cloves
Coriander leaves (cilantro)roots and stems
White pepper1 tsp
Palm sugar (gula melaka)3 tbsp
Fish sauce1½ tbsp
Oyster sauce1½ tbsp
Soy sauce1 tbsp
Cooking oil (vegetable oil)1 tbsp
Thick coconut milk¼ cup, for basting

Method

4 steps
  1. 1Pound the garlic, coriander roots and white pepper to a paste.
  2. 2Mix with the palm sugar, sauces and oil, and massage into the pork. Marinate at least 2 hours, or overnight.
  3. 3Thread the pork tightly onto soaked bamboo skewers, bunching the slices.
  4. 4Grill over medium coals or a grill pan for 10 to 12 minutes, turning and basting with coconut milk, until caramelised and no pink remains.
Serve it like this

Serve skewers on a banana leaf or plate with a bag of warm sticky rice and a spicy jaew dip.
