Apple6 firm apples
Lemon½ lemon, juiced
Sugar¾ cup
Water2 tbsp
Butter60 g, cubed
Miso paste1 heaped tbsp white miso
Puff pastry1 sheet
Crème fraîche½ cup, to serve
Sesame seeds1 tsp, toasted

Method

7 steps
  1. 1Peel, core and quarter the apples. Toss with the lemon juice.
  2. 2In a 24 cm ovenproof pan on medium heat, melt the sugar with the water without stirring for 6 to 8 minutes.
  3. 3Off the heat, whisk in the butter, then the miso. Careful, it will bubble up.
  4. 4Pack the apples in tightly, rounded side down. Cook on medium low heat for 10 minutes, then cool 10 minutes.
  5. 5Lay the pastry over, tuck the edges down the sides and prick a few holes. Bake in the oven at 200°C for 25 to 30 minutes.
  6. 6Rest 5 minutes. Put a plate on top and flip the pan in one confident move, using oven gloves.
  7. 7Serve warm in wedges with crème fraîche and a sprinkle of sesame.
Serve it like this

Set a warm wedge on a plate, add a quenelle of crème fraîche beside it and drizzle a thin line of pan caramel. A pinch of sesame on the cream.
