Classic millionaire’s shortbread.

Ingredients

12 servings
Maida (all-purpose flour, plain flour)1½ cups
Sugar¼ cup
Butter1 cup, divided
Condensed milk (sweetened condensed milk)1 tin
Brown sugar⅓ cup
Golden syrup (golden syrup or light corn syrup)2 tbsp
Dark chocolate (bittersweet chocolate)200 g
Salta pinch

Method

5 steps
  1. 1Heat the oven to 170 C and line an 8 inch square tin. Rub 125 g butter into the maida, sugar and salt to a dough and press into the tin.
  2. 2Prick and bake 20 to 25 minutes until pale gold. Cool.
  3. 3Melt the remaining butter, brown sugar, golden syrup and condensed milk in a heavy pan, stirring constantly on low until thick and golden, 8 to 10 minutes.
  4. 4Pour over the base, smooth and chill 30 minutes.
  5. 5Melt the chocolate, spread over the caramel and chill until set. Cut with a hot knife.
Serve it like this

Cut into small squares, as it is rich, and serve on a board with strong tea or coffee.
