Method
5 steps
1Sprinkle salt over the chopped methi and leave for 10 minutes.
2Add the flours, rava, curd, ginger, chilli, sugar, lemon, turmeric, chilli powder, soda and 1 tbsp oil. Knead into a soft dough, adding water only if needed. Shape into 3 or 4 logs.
3Steam the logs on a greased plate over boiling water.
4Let them cool for 10 minutes, then slice into rounds.
5Heat the remaining oil, crackle the mustard, sesame and asafoetida, and toss the slices until the edges crisp. Finish with coriander.
Serve it like this
Serve hot on a plate, with a few fresh coriander leaves on top.
