Ingredients

4 servings
Masa harina2 cups
Waterabout 1 1/3 cups, warm
Salt½ tsp
Black beans, dry½ cup dry, cooked and mashed
Cooking oil (vegetable oil)2 tbsp, or lard
Queso fresco1 cup, crumbled
Tomato3
Dried red chilli3 chiles de árbol
Garlic2 cloves
Onion¼

Method

5 steps
  1. 1Mix the masa harina, water and salt into a soft dough that does not crack at the edges. Cover and rest 10 minutes.
  2. 2Char the tomatoes, chillies, garlic and onion on a dry tawa, then blend with salt into a loose salsa.
  3. 3Pat golf ball sized pieces into ovals about 12 cm long and 5 mm thick. Cook on a medium hot tawa for 2 minutes a side.
  4. 4While still hot, pinch up a little rim around each oval, using a damp cloth to protect your fingers.
  5. 5Brush with oil, spread mashed beans, spoon on salsa, scatter cheese and return to the tawa for a minute.
Serve it like this

Serve two or three hot off the tawa on a plate with extra salsa in a small bowl. A mug of café de olla on the side is traditional.
