Gorditas de picadillo.

Ingredients

4 servings
Masa harina2½ cups
Water1⅔ cups, warm
Baking powder½ tsp
Cooking oil (vegetable oil)4 tbsp
Minced beef (beef mince, beef or buff keema)300 g
Potato1 medium, small dice
Carrot1, small dice
Tomato2, blended
Onion1 small, chopped
Garlic2 cloves
Cumin powder (ground cumin)a pinch
Saltto taste
Lettuce1 cup, shredded
Queso fresco½ cup, crumbled

Method

4 steps
  1. 1Brown the beef in 1 tbsp oil, add onion and garlic, then the blended tomato, potato, carrot, cumin and salt. Simmer covered 15 minutes.
  2. 2Mix masa harina, baking powder, salt and water into a soft dough. Shape 8 balls and pat into discs 1 cm thick.
  3. 3Cook on a medium tawa 4 minutes a side, then fry briefly in the remaining oil until lightly crisp.
  4. 4Slit each gordita along one side to make a pocket and stuff with picadillo, lettuce and cheese.
Serve it like this

Stand the stuffed gorditas upright in a basket lined with a napkin, with salsa roja and pickled jalapeños alongside.
