Butter1 cup, soft, divided
Sugar¾ cup plus 2 tbsp, powdered, divided
Maida (all-purpose flour, plain flour)1¼ cups
Cornflour (cornstarch)½ cup
Vanilla essence (vanilla flavouring, imitation vanilla extract)1 tsp
Lemonzest and a little juiceMethod
- 1Beat 175 g butter with 50 g powdered sugar and vanilla until pale.
- 2Fold in maida and cornflour into a soft dough.
- 3Roll into 24 small balls, place on a tray and flatten with a floured fork.
- 4Bake at 170 C for 12 to 15 minutes.
- 5Beat the remaining butter, sugar and lemon into a fluffy filling. Sandwich the cooled cookies.
Serve it like thisArrange the sandwiches on a pretty plate with a dusting of icing sugar and serve with tea.
