Ingredients

8 servings
Maida (all-purpose flour, plain flour)1⅓ cups (pastry and filling)
Butterfor pastry and filling
Sugarfor pastry and filling
Egg3
Milk3 cups
Cornflour (cornstarch)3 tbsp
Whole spices1 cinnamon stick plus ground cinnamon to dust
Salta pinch

Method

4 steps
  1. 1Rub 75 g butter into 150 g flour and 30 g sugar, add 1 egg and bring to a dough. Press into a tart tin and chill 20 minutes.
  2. 2Blind bake at 180 C with a weight until golden.
  3. 3Heat milk with cinnamon stick. Whisk 2 eggs, the rest of the sugar, cornflour and 20 g flour. Pour hot milk in, return to the pan and stir until thick. Add the rest of the butter.
  4. 4Pour into the shell, dust with cinnamon, cool and chill until set.
Serve it like this

Slice cold, dust with extra cinnamon and serve with rooibos tea or coffee.
