Ingredients

Brinjal (eggplant, aubergine)2 large
Garlic2 cloves, grated
Olive oil3½ tbsp
Vinegar1 tbsp red wine vinegar
Lemon juice1 tbsp
Flat leaf parsleya handful, chopped
Onion2 tbsp red onion, grated
Walnutsa handful, chopped, optional
Saltto taste

Method

4 steps
  1. 1Char the brinjals directly on a gas flame or grill, turning, until collapsed and black.
  2. 2Cool, peel and drain the flesh in a sieve.
  3. 3Chop the flesh finely and mix with garlic, onion, vinegar, lemon and salt, then beat in the olive oil.
  4. 4Fold in parsley and walnuts.
Serve it like this

Spoon into a shallow bowl, drizzle with olive oil, scatter parsley and serve with warm pita.
