Ingredients

4 servings
Shallots8, some fried for topping
Garlic5 cloves
Dried red chilli10, soaked
Dried shrimp2 tbsp
Curry powder2 tbsp meat curry powder
Taucheo1 tbsp
Cooking oil (vegetable oil)2 tbsp
Chicken stock (chicken broth)4 cups
Sweet potatoboiled and mashed
Peanutsroasted, ground
Sugar1 tbsp
Salt1 tsp
Egg noodlesyellow noodles, or 500 g fresh
Moong sprouts (mung bean sprouts)blanched
Egg4, boiled
Firm tofufried, cubed
Green chillisliced
Calamansihalved

Method

5 steps
  1. 1Blend the shallots, garlic, chillies and dried shrimp.
  2. 2Fry the paste in the oil with the curry powder and taucheo for 8 minutes.
  3. 3Add the stock, mashed sweet potato, ground peanuts, sugar and salt. Simmer 15 minutes, stirring, until thick and smooth.
  4. 4Blanch the noodles and sprouts and divide into bowls.
  5. 5Ladle over the gravy and top with egg, tofu, green chilli, fried shallots and calamansi.
Serve it like this

Serve in a wide bowl with the thick gravy covering the noodles, egg halves, tofu and calamansi on top.
