Classic sago gula melaka.

Ingredients

4 servings
Sabudana (tapioca pearls)¾ cup
Palm sugar (gula melaka)⅔ cup, chopped
Water6 cups for boiling plus 1/2 cup for syrup
Pandan leaves2, knotted
Thick coconut milk¾ cup
Salta pinch

Method

5 steps
  1. 1Boil a big pot of water and pour in the sabudana, stirring. Cook 10 to 12 minutes.
  2. 2Drain and rinse under cold water until the starch runs off. Spoon into moulds or cups and chill 1 hour.
  3. 3Simmer the palm sugar with 1/2 cup water and pandan until dissolved and slightly syrupy. Strain.
  4. 4Warm the coconut milk with salt and pandan for 2 minutes. Cool.
  5. 5Unmould the sago, pour over coconut milk and syrup.
Serve it like this

Turn out the chilled sago into small bowls, pour coconut milk around and drizzle palm sugar syrup on top at the table.
