Ingredients

4 servings
Sardine (mathi)500 g, cleaned
Kudampuli2 pieces
Kashmiri chilli powder1½ tbsp
Turmeric (ground turmeric)¼ tsp
Shallots6, sliced
Ginger2.5 cm
Garlic5 cloves
Green chilli2
Fenugreek seedsa pinch
Coconut oil2 tbsp
Curry leaves2 sprigs
Water1 cup
Saltto taste

Method

4 steps
  1. 1Soak kudampuli in a little warm water.
  2. 2Heat coconut oil in a clay pot, splutter fenugreek, add shallots, ginger, garlic, chillies and curry leaves.
  3. 3Add chilli powder and turmeric with a splash of water and cook until the oil separates.
  4. 4Add water, kudampuli and salt, boil, then add sardines and simmer gently until cooked and the gravy thickens.
Serve it like this

Serve straight from the clay pot with hot rice and a thoran.
