Ingredients

6 servings
Cassava leaves600 g pounded cassava leaves (frozen works)
Peanuts1⅓ cups raw peanuts, finely ground
Thick coconut milk1⅔ cups
Prawns (shrimp)300 g, or crab
Garlic5 cloves
Onion1, chopped
Water1⅔ cups
Saltto taste

Method

3 steps
  1. 1Simmer the cassava leaves with garlic, onion and water for 45 minutes, stirring often.
  2. 2Stir in the ground peanuts and half the coconut milk and simmer gently for 30 minutes.
  3. 3Add the prawns and remaining coconut milk and cook until the prawns are pink.
Serve it like this

Spoon matapa over white rice in a bowl, prawns on top, with a wedge of lime.
