Turmeric (ground turmeric)¾ tsp, divided
Saltto taste
Mustard oil2½ tbsp
Fenugreek seeds¼ tsp
Green chilli3, slit
Tomato4 ripe, chopped
Water2½ cups
Lemon juicejuice of 1 lemon
Coriander leaves (cilantro)a handfulMethod
- 1Rub the fish with half the turmeric and a little salt. Rest 10 minutes.
- 2Heat the mustard oil until it smokes, lower the heat and fry the fish lightly on both sides. Keep aside.
- 3In the same oil, add the fenugreek seeds, then the green chillies.
- 4Add the tomatoes with the rest of the turmeric and salt. Cook, mashing, until they collapse.
- 5Pour in the water and bring to a boil. Slide in the fish and simmer gently.
- 6Turn off the heat. Stir in the lemon juice and coriander and serve with rice.
Serve it like thisServe hot in a deep bowl with a swirl of ghee or a few coriander leaves on top, and rice or rotis on the side.
