Classic mangodi ki sabzi.

Ingredients

4 servings
Mangodi (moong dal wadi)1 cup
Potato2 medium, cubed
Cooking oil (vegetable oil)2 tbsp
Cumin seeds1 tsp
Asafoetidaa pinch
Onion1 medium, chopped
Tomato2 medium, pureed
Ginger1.5 cm, grated
Turmeric (ground turmeric)¼ tsp
Red chilli powder (indian red chili powder)¾ tsp
Coriander powder (ground coriander)2 tsp
Garam masala½ tsp
Water1⅔ cups
Saltto taste
Coriander leaves (cilantro)chopped

Method

4 steps
  1. 1Fry the mangodi in oil on low heat until golden. Lift out.
  2. 2In the same oil, add cumin, asafoetida, onion and ginger and fry until golden. Add tomato puree and powders and cook until oil separates.
  3. 3Add potatoes, mangodi, water and salt. Pressure cook 2 whistles. Let pressure release naturally.
  4. 4Finish with garam masala and coriander.
Serve it like this

Serve hot in a deep bowl with a swirl of ghee or a few coriander leaves on top, and rice or rotis on the side.
