Classic mandazi.

Ingredients

8 servings
Maida (all-purpose flour, plain flour)3¼ cups
Thin coconut milk1 cup coconut milk, warm
Sugar6 tbsp
Instant dry yeast1½ tsp
Cardamom1 tsp
Salta pinch
Cooking oil (vegetable oil)for frying (about 5 tbsp absorbed)

Method

4 steps
  1. 1Mix flour, sugar, yeast, cardamom and salt. Add warm coconut milk and knead to a soft dough.
  2. 2Cover and rest until doubled.
  3. 3Roll 1/2 inch thick and cut into triangles. Rest 10 minutes.
  4. 4Fry in medium hot oil, turning, until golden.
Serve it like this

Pile in a basket, dust with sugar or leave plain, and serve with milky spiced chai.
