Classic thekua.

Ingredients

10 servings
Whole wheat flour (wholemeal atta flour, chapati flour)2 cups
Jaggery⅔ cup, grated
Water⅓ cup
Ghee3 tbsp for dough, rest absorbed in frying
Desiccated coconut (unsweetened shredded coconut)3 tbsp
Fennel seeds1½ tsp
Cardamom¼ tsp

Method

4 steps
  1. 1Melt the jaggery in water and cool till warm.
  2. 2Rub 3 tbsp ghee into the atta with coconut, fennel and cardamom, then knead a stiff dough with the jaggery water.
  3. 3Press small balls into a thekua mould or flatten and score with a fork.
  4. 4Fry on low heat until deep brown and crisp.
Serve it like this

Drain on paper for a minute, pile onto a plate and serve hot with chutney on the side.
