Ingredients

6 servings
Milk powder (powdered milk)1¼ cups
Milk¼ cup
Ghee1 tbsp
Sugar20 g for the sheet, 30 g for the filling
Khoa½ cup, grated
Pistachios1½ tbsp, chopped
Almonds1½ tbsp, chopped
Cardamom¼ tsp
Rose watera few drops

Method

4 steps
  1. 1Lucknow halwais layer real malai skins; this home method cooks a milk sheet. Cook milk powder, milk, ghee and 20 g sugar on low heat into a soft dough.
  2. 2Roast khoa with 30 g sugar, nuts, cardamom and rose water until it holds.
  3. 3Roll the dough between two greased sheets of butter paper into a thin rectangle and cut into 12 squares.
  4. 4Place filling on each, fold into a triangle like a paan and chill.
Serve it like this

Serve chilled on a silver or white plate, two per person, topped with a pistachio sliver.
