Classic shahi tukda.

Ingredients

6 servings
Whole wheat bread (wholemeal bread)6 slices, edges trimmed
Gheefor shallow frying
Milk3 cups, full cream
Sugar¾ cup, divided
Water½ cup
Saffrona big pinch
Cardamom¼ tsp
Almonds1 tbsp, slivered
Pistachios1 tbsp, slivered

Method

4 steps
  1. 1Simmer the milk, stirring often, until reduced to about a third. Add 50 g sugar, saffron and cardamom.
  2. 2Cut bread into triangles and shallow fry in ghee until crisp and golden.
  3. 3Boil the remaining sugar with water for 3 minutes. Dip each bread piece for a few seconds.
  4. 4Arrange on a plate, pour the rabri over and top with nuts. Serve warm or chilled.
Serve it like this
