Ingredients

2 servings
Soba noodles250 g buckwheat noodles
Gochujang2 tbsp
Gochugaru2 tsp
Soy sauce1 tbsp
Vinegar4 tsp
Sugar1 tbsp
Garlic3 cloves, grated
Sesame oil2 tsp
Sesame seeds1 tbsp, crushed
Napa cabbage kimchi⅔ cup, chopped
Cucumber½, julienned
Egg2, hard boiled
Nori sheets1 sheet, toasted and crumbled
Water1¼ cups ice cold broth or dongchimi brine

Method

4 steps
  1. 1Mix gochujang, gochugaru, half the soy, vinegar, sugar, garlic and sesame oil.
  2. 2Stir the rest of the soy and a pinch of sugar into the cold water.
  3. 3Boil noodles 4 minutes, then scrub in cold water and drain.
  4. 4Pile noodles with kimchi, cucumber, egg, sauce, nori and crushed seeds; pour broth around and mix at the table.
Serve it like this

Serve in a wide bowl with broth poured round the noodle mound; mix at the table and eat cold.
