Ingredients

6 servings
Pearl couscous (giant couscous, israeli couscous)2½ cups maftoul
Chicken, curry cut (bone in chicken, small pieces)1 kg
Onion8 small or 3 large, quartered
Chickpeas, boiled1½ cups cooked
Pumpkin300 g, cubed (optional)
Baharat2 tsp
Cumin powder (ground cumin)1 tsp
Cinnamon1 stick
Cooking oil (vegetable oil)3 tbsp
Ghee2 tbsp
Saltto taste
Water1.5 litres

Method

4 steps
  1. 1Brown the chicken in half the oil with baharat. Add water, cinnamon and salt and simmer until cooked through.
  2. 2Add the onions, chickpeas and pumpkin and simmer until tender.
  3. 3Toss the maftoul with the remaining oil, cumin and a little salt, then steam over the simmering broth or cook in some of the broth until tender.
  4. 4Toss the maftoul with ghee and a ladle of broth. Pile on a platter with chicken, chickpeas and onions, and serve more broth on the side.
Serve it like this
