Ingredients

6 servings
Mutton (goat meat)600 g lamb or mutton, cubed
Peanut butter½ cup unsweetened
Tomato puree¼ cup tomato paste
Tomato2, chopped
Onion1 large, chopped
Garlic4 cloves
Scotch bonnet chilli (habanero or scotch bonnet pepper, habanero chilli)1, whole
Carrot2, chunks
Sweet potato1 large, chunks
Cabbage1 small wedge
Cooking oil (vegetable oil)2 tbsp
Stock cube (bouillon cube)1 cube
Water4 cups
Saltto taste

Method

4 steps
  1. 1Brown the meat in oil, then add onion and garlic.
  2. 2Add tomato paste and fresh tomato and fry until thick.
  3. 3Whisk peanut butter into some of the water until smooth, add to the pot with the rest of the water, cube and whole chilli.
  4. 4Simmer 45 minutes, stirring from the bottom. Add the vegetables and cook until tender.
Serve it like this

Ladle over white rice in a wide bowl, vegetables on top, with the whole chilli for anyone brave.
