Ingredients

4 servings
Chicken, curry cut (bone in chicken, small pieces)1 kg chicken on the bone, in pieces
Peanut butter½ cup groundnut paste
Tomato2, chopped
Onion1, chopped
Button mushroom150 g, sliced
Curry powder1 tsp
Water1¼ cups
Saltto taste

Method

4 steps
  1. 1Soften banana leaves over a flame until pliable (or use parchment and foil).
  2. 2Whisk groundnut paste with water, tomato, onion, curry powder and salt into a sauce.
  3. 3Divide chicken and mushrooms between leaves, pour over sauce, and tie into tight parcels.
  4. 4Steam over boiling water for 1 1/2 hours until the chicken is cooked through with no pink.
Serve it like this

Bring the parcels to the table on a platter and open them there. Serve with matoke, rice or sweet potatoes.
