Ingredients

6 servings
Maida (all-purpose flour, plain flour)2 cups
Ghee3 tbsp
Waterabout 1/2 cup
Saltto taste, divided
Minced mutton (goat mince, ground goat)300 g
Onion1, finely chopped
Ginger garlic paste1 tbsp
Green chilli2, minced
Red chilli powder (indian red chili powder)1 tsp
Turmeric (ground turmeric)¼ tsp
Garam masala1 tsp
Mint leaves2 tbsp, chopped
Coriander leaves (cilantro)2 tbsp, chopped
Lemon juice2 tsp
Cooking oil (vegetable oil)for frying and filling

Method

5 steps
  1. 1Rub ghee into flour and salt, add water and knead to a stiff dough. Rest 30 minutes.
  2. 2Fry onion in a little oil, add mince, ginger garlic and spices; cook until completely dry.
  3. 3Stir in mint, coriander and lemon; cool.
  4. 4Roll dough thin, cut into 8 cm squares, fill, cover with another square and seal with a fork.
  5. 5Fry at 165 C until pale golden and blistered.
Serve it like this

Stack lukhmis on a platter with lemon wedges and mint chutney. Serve hot.
