Classic Irani chai.

Ingredients

3 servings
Water1¼ cups
Tea leaves (black tea leaves)2 heaped tsp, strong CTC
Cardamom2 pods, crushed
Milk2 cups, full cream
Condensed milk (sweetened condensed milk)2 tbsp
Sugar1 tbsp, or to taste

Method

4 steps
  1. 1Simmer the milk with the condensed milk, stirring, until reduced by about a third.
  2. 2Meanwhile boil the water with tea leaves, cardamom and sugar, then cover and keep on the lowest heat to dum.
  3. 3Strain the tea decoction into cups, filling them halfway.
  4. 4Top up with the hot reduced milk and stir.
Serve it like this

Pour into glasses just before serving, nicely chilled or piping hot, whichever it's meant to be.
