Ingredients

4 servings
Whole masoor (brown lentils)¾ cup brown lentils
Olive oil1½ tbsp
Onion1 large, chopped
Red bell pepper (red capsicum, red pepper)1, chopped
Garlic2 cloves
Tomato puree1 cup
Tomato ketchup (ketchup)3 tbsp
Prepared mustard2 tsp
Brown sugar2 tsp
Vinegar2 tsp
Soy sauce2 tsp
Paprika1 tsp
Red chilli powder (indian red chili powder)½ tsp
Water1⅔ cups
Whole wheat burger bun (wholemeal bap)4 buns

Method

4 steps
  1. 1Simmer the lentils in the water until tender but holding shape. Drain any extra liquid.
  2. 2Cook the onion and pepper in the oil until soft, then add garlic and paprika.
  3. 3Add the lentils, tomato puree, ketchup, mustard, sugar, vinegar, soy sauce, chilli and salt. Simmer until thick and glossy.
  4. 4Toast the buns and pile on the filling.
Serve it like this

Pile onto toasted buns on a tray lined with paper, with pickles and a side of coleslaw or wedges, and lots of napkins.
