Mutton (goat meat)800 g lamb shoulder, cubed
Onion2 large
Dried apricot1 cup
Honey1½ tbsp
Cinnamon1 stick
Dry ginger powder (ground ginger)½ tsp
Ras el hanout2½ tsp
Saffrona pinch
Almonds⅓ cup, toasted
Sesame seeds1 tsp, toasted
Olive oil2 tbsp
Coriander leaves (cilantro)a handful
Saltto taste
Water2 cups

Method

4 steps
  1. 1Brown the lamb in oil with the onions and spices.
  2. 2Add the water, cover and simmer until the lamb is very tender.
  3. 3Add the apricots, honey and cinnamon and cook uncovered until the sauce is syrupy.
  4. 4Scatter the toasted almonds, sesame and coriander on top.
