Couscous2¼ cups
Mutton (goat meat)400 g lamb
Onion1 large
Carrot2
Turnip1
Zucchini (courgette, baby marrow)1
Pumpkin200 g
Cabbage¼ head
Chickpeas, boiled1¼ cups cooked
Tomato2
Turmeric (ground turmeric)½ tsp
Dry ginger powder (ground ginger)½ tsp
Black pepper½ tsp
Saffrona pinch
Coriander leaves (cilantro)a bunch
Flat leaf parsleya bunch
Butter2 tbsp
Olive oil2 tbsp
Saltto taste
Water6 cups

Method

4 steps
  1. 1Brown the lamb with onion, tomato, spices and half the herbs in the oil. Add water and simmer.
  2. 2Add the carrot, turnip and cabbage first, then the pumpkin, zucchini and chickpeas 15 minutes later.
  3. 3Steam the couscous over the broth, then fluff with butter and a little water, and steam again.
  4. 4Mound the couscous on a platter, arrange the vegetables and meat on top and ladle over broth.
Serve it like this
