Ingredients

4 servings
Maida (all-purpose flour, plain flour)2½ cups
Instant dry yeast1 tsp
Water¾ cup warm
Cooking oil (vegetable oil)2 tsp
Saltto taste
Minced mutton (goat mince, ground goat)250 g lamb mince
Onion1, grated
Tomato2, grated
Capsicum (green capsicum, green bell pepper)½, finely chopped
Red bell pepper (red capsicum, red pepper)½, finely chopped
Flat leaf parsleya handful, plus more to serve
Garlic2 cloves
Tomato puree2 tbsp, or Turkish pepper paste
Kashmiri chilli powder1½ tsp, or pul biber
Cumin powder (ground cumin)½ tsp
Lemon juicelemon wedges

Method

4 steps
  1. 1Make a soft dough and let it rise until doubled.
  2. 2Blitz the onion, tomato, peppers, garlic, parsley, paste and spices, then mix with the mince.
  3. 3Roll dough into very thin rounds and spread a thin layer of topping to the edges.
  4. 4Bake on a very hot tray at the top of a 250 C oven until edges crisp and the meat is cooked.
Serve it like this

Serve flat on a board with parsley, sliced onion with sumac and lemon wedges. Roll up and eat by hand with ayran.
