Per serving, worked out from the ingredient table. Grandma's way is the starting point the other versions are compared with.

Ingredients

6 servings
Maida (all-purpose flour, plain flour)3¼ cups
Instant dry yeast1½ tsp
Sugar1 tsp
Salt1 tsp
Curd (plain yogurt, natural yoghurt)⅔ cup
Water⅔ cup, lukewarm
Olive oil1 tbsp
Butter2 tbsp, to serve
Honey2 tbsp, to serve

Method

5 steps
  1. 1Mix the maida, yeast, sugar and salt. Add the curd, lukewarm water and olive oil and knead 8 to 10 minutes into a soft, slightly sticky dough.
  2. 2Cover and leave in a warm place for 1 hour until doubled.
  3. 3Divide into 6 balls and rest 10 minutes. Pat each into a round about 1 cm thick and 15 cm across.
  4. 4Heat a heavy dry tawa on medium. Cook one bread 2 to 3 minutes until it puffs and brown spots form underneath. Flip and cook 2 minutes more.
  5. 5Wrap the cooked breads in a cloth while you finish the rest. Serve warm with butter and honey.
