Ingredients

4 servings
Lamb (lamb or tender mutton)800 g, small chunks
Onion3, sliced
Potato3, cubed (optional)
Cooking oil (vegetable oil)3 tbsp
Saltto taste
Black pepper1 tsp
Cumin seeds½ tsp
Coriander leaves (cilantro)to garnish

Method

4 steps
  1. 1Heat oil in a heavy pot until shimmering and brown the lamb in batches.
  2. 2Return all the meat, add the potatoes and fry, turning, until they colour.
  3. 3Add onions, cumin, salt and pepper, cover and cook on low until the lamb is tender and the potatoes soft.
  4. 4Scatter with coriander and serve hot.
